Pesto cauliflower gnocchi with spinach and spicy sausage

A very easy dinner for those nights you want to eat home, don’t really want to cook, want to eat clean but need some comfort food.

I forgot to take a picture of the finished product with the sausage, but you get the idea.

Here’s what you need:

  • Cauliflower gnocchi - I use TJ’s

  • Pesto - I love TJ Kale Pesto

  • Spicy chicken sausage (or whatever kind you want)

Here’s what you do:

  • Cook the sausage

  • Cook the gnocchi - I add the gnocchi to a pan with some olive oil and saute until they get a little brown (around 5-10 minutes)

  • Add in the spinach - cooks in about 2-3 minutes

  • Mix in the pesto

  • Eat!
