I seriously make this once per week. I’ll make it with regular pasta, spaghetti squash or zucchini noodles and whatever veggies I have in my fridge. So good.
Gluten free vegan lasagna from MWH
My mom asks me to make this for her every time we’re together - it’s that good. It’s got lots of veggies, but still hits the “lasagna” spot. I actually don’t use any cheese.

Hits.the.spot. I usually cook it for 45 to an hour so the eggplant gets soft and delicious. It’s amazing.
